Sen. Blakespear Names The Plot Restaurant as Small Business of the Year

OCEANSIDE, Calif. – Sen. Catherine Blakespear, D-Encinitas, on Monday presented The Plot restaurant in Oceanside with a resolution for being selected as her Senate District 38 Small Business of the Year.

The critically acclaimed restaurant, which opened in 2020, is vegan and aims to be completely sustainable, zero waste and regenerative in its business operations. The restaurant diverts 100 percent of waste from landfills, and less than 1 percent of the food product brought into the business is discarded.

“The Plot is an incredible restaurant that serves up delicious food while being completely sustainable and zero waste,” Blakespear said. “The Plot is a model for others to follow, as we all work toward our sustainability goals, to reduce waste and to eliminate practices that contribute to climate change.”

The restaurant goes the extra mile to be sustainable, including using produce from its garden whenever possible, getting additional ingredients from regenerative farms and making products in-house to reduce packaging.

All food waste is repurposed. For example, the restaurant uses tofu whey for caramel, beet scraps for ketchup and mushroom scraps, which are dried and smoked, to create the zesty taste for their house-made cheese. To-go boxes are compostable.
